Team behind acclaimed restaurant open pop-up diner which ‘explores the notion of fast food through one cow’

An acclaimed Stockport restaurant has crossed the border into Manchester with a new fast food offering.

Bosses behind Where The Light Gets In have opened the new pop-up site named Humbug at Kampus in Manchester city centre. They will be taking over The Bungalow at Kampus until February 2.

Humbug is the second part of a series of events and workshops the restaurant is running in Manchester between November 2024 and March 2025. The Stockport restaurant was awarded a Michelin Green Star for sustainability in 2021 and it has picked up a number of accolades since it was launched by chef-patron Samuel Buckley in 2016 inside an old coffee warehouse in the town’s historic Underbanks quarter.

Named Where The Light Gets In: A Play in the City, the events and dining experiences will take place at venues across the city including a community space in the NOMA neighbourhood and The Bungalow at Kampus. Described as a ‘four-act’ programme that combines food, art and urban living, it will encompass concept dining, panel discussions, workshops, film screenings and exhibitions.

On Instagram, Where The Light Gets In describes the fast food project. A post reads: “Humbug explores the notion of fast food through one cow. We consider the historical and social impacts of fast food and how a city sustains itself.

“Utilising the whole of one traceable animal is a response to the lack of transparency in much of what we eat in our cities today. Over the next month, we will tell the story of the cow and all of its parts, with its relevance to the history and future of fast food.

In February, and moving into ‘act three’, the Kampus space will be transformed into a restaurant designed to reflect the beginnings of spring, while away from the city centre neighbourhood, there will be panel discussions on the history of communal green spaces, a pickling walk-in centre where visitors can bring in vegetables, a film screening and urban foraging and litter picking.

For it’s final act, Where The Light Gets In will be hosting a huge series of banquets with platters of vegetables, meats and fish with plenty of wine too. Those wanting to attend will be able to book in for a slot between 3 to 30 March via the restaurant’s website.
